my new favorite grocery item


This stuff is so good! It tastes like this coconut curry soup that they have at a restaurant called the Bangkok Grill here in Provo. I did add a little ginger and cinnamon to spice it up a bit. You can simmer chicken, fish, vegetables, pretty much anything in this stuff and then eat it over rice. If you like thicker curry (as I do), add a bit of cornstarch or flour. Very tasty, and super easy!

A post for Josh


So I just realized the other day how I have this blog about "The Haneys", yet all my blogs are only about me! lol. So here is a little tidbit that Josh accomplished last week. He made me the most AMAZING dinner! It was enchilada casserole. Now, I love enchiladas and have always thought myself to be a fair maker of them, but these were the BEST I HAVE EVER HAD! He made them so good. I could not believe how good they tasted. And I must say, even though this is humbling, that yes- they were better than I could make them ;) He is so good to me. I am much too spoiled.

First Injections!!




This week in my lab we did INJECTIONS!!!! AAHHHH it was so scary because we practiced on each other!! It was my first time actually giving a shot to another person. It wasn't as bad as I thought it would be, in fact, it was actually kind of fun. I love nursing! It is so much fun to be learning the practical skills that we will be using for the rest of our careers.

this week's cooking



Well I thought I'd post some of the things I've been cooking. Two nights ago we had trout! I never cook fish because I hate it, but Josh really wanted some and so I agreed to cook it. We got it at costco pre-gutted and ready to be cooked. I stuffed them with breadcrumbs, onions, garlic, seasoning, and then sprinkled lemon juice over the top. When they came out, the flesh was moist and flaky. Not a bad fish to eat if your not a fan of them.

The cupcakes were kind of a pride statement. A new cupcake shop has opened here in provo and they charge like 2.75 for these jumbo cupcakes. I made a bet with myself that I could make some just as pretty and even better tasting. They were delicious!!
